What led you to where you are today?
I founded Brinkley's Foods after struggling to find clean, real-ingredient products on the shelves after being diagnosed with various food allergies. I was teaching yoga at the time, and started bringing my pancakes to clients - soon after that, the business was born. My family has always had a passion for food, and now we get to work together to bring Brinkley’s Good Flippin’ Pancakes across the country.
What do you wish you knew before embarking on your entrepreneurial journey?
I wish I knew that there is no blueprint on this journey - for anyone! Everyone is making it up as they go, and knowing that from the start would have taken some pressure off.
What is the most difficult decision you've had to make regarding your business so far?
Deciding whether or not to expand outside of Memphis and go national. Soon after we decided to expand, amazing doors opened for us very quickly, and we knew it was the right choice!
What can you help the VEGPRENEUR community with?
We love partnering with other plant-based, better-for-you brands doing events, giveaways, social media collaborations...our dream is to host a plant-based pancake breakfast with our pancakes (of course), and some of our favorite brands that we love to enjoy our pancakes with - think Cocojune, Smash, Malk, Lifeboost...the list is endless! There are so many fun partnerships to be had, and we can't wait for what's to come.

Fun fact about you:
When I'm not flippin' pancakes, I can usually be found at my farm, where I love spending time with my donkeys, Odis and April. We have a lot of stray dogs wander up to the farm, so my sister Connell and I have become dog rescuers - we currently have six!
Anything else you would like to share?
We will be launching at Erewhon at the end of June and hope to meet some Vegpreneur readers over the summer when we come to LA to sample at the stores!
