The backing from a traditional seafood industry leader marks an industry shift, validating Oshi’s technology as the potential future of the category. After five years of rigorous R&D and growing market traction, Oshi is now moving from pilot success to national scale.

Launching the Whitefish Series: Beyond Salmon
Oshi is officially evolving into a comprehensive seafood platform with the launch of its Whitefish product line. Developed over 18 months, the Whitefish series utilizes Oshi’s patented technology to create a whole-cut fillet that mimics the delicate, flaky texture of traditional whitefish.
Unlike other products in the market, Oshi’s Whitefish focuses on a versatile, "ocean-scented" flavor profile designed to appeal to a wide audience-from fine-dining chefs to families. The new line is joining Oshi’s flagship salmon in high-profile venues and retailers across the U.S.
From Pilot Success to National Retail Scale
In just 12 months since its pilot launch, Oshi has expanded into 100+ restaurant menus, including Neat Burger (backed by Leonardo DiCaprio and Lewis Hamilton), Veggie Grill, and City Roots.
The company has seen revenue grow 4x year-over-year and is now preparing for a major national retail rollout targeting 686 doors in 2026. This expansion is supported by industry-leading distributors KeHE and UNFI, with products entering retailers such as Lassens, Mother’s Market, and Earthfare. By leveraging its "plug-and-play" manufacturing model, Oshi has already reduced production costs by over 80%, paving the way for price parity with conventional fish.
