What led you to where you are today?

I've always known that I wanted to start something on my own one day. While studying business administration in Copenhagen, I was working at a gourmet restaurant as a waitress and event planner. I also started a food blog during my university days but had to stop when I got my first full-time job at a software company. With my new job, I moved to Switzerland where the food culture is more traditional and not as innovative as I had been used to from other cities, not to talk about the plant-based offering that was very limited at the time. Since I was young, I loved cooking and baking - it became one of my greatest passions. However, the COVID lockdown of March 2020 resulted in me having much more time for exploring the world of vegan baking, and I decided to start an Instagram account with what I was doing to test the market and the interest. This was the beginning of my journey, and now only 7 months later I have 3 business customers that are selling my cakes, 1300 followers on Instagram, and lots of private orders, almost making it hard to keep up.

What do you wish you knew before embarking on your entrepreneurial journey? 

How the administrational tasks are always way more complicated than you think, how costs are always much higher than you think (especially in gastronomy), BUT how damn amazing it feels to work with what truly sparks joy inside of you.

What is the most difficult decision you've had to make regarding your business so far? 

It is a decision that I have yet to make: When to quit my office job and take the risk of going full time with the bakery.

How can the VEGPRENEUR community help you? 

I would love to connect with other entrepreneurs in this space, especially within gastronomy. Brand awareness. And of course, I'd love to meet a potential future investor.

Fun fact about you: 

I was a tennis coach when I was younger, I love singing, I am half Danish half Mexican, and I laugh a lot.
