What led you to where you are today?

As an investment banker, I found myself juggling work, life, and the constant struggle of trying to make better food choices, while still enjoying the pleasures of the meal I love. It was at my bank, when I would work late and order takeout to the office, that I realized how difficult it was to incorporate more vegetables into my daily routine. Edggies picks up on that philosophy: it's about making health easy, fun, and flavorful. By sprinkling edggies into your meals, you’re already one step closer to better eating habits, without the effort or the guilt.

What do you wish you knew before embarking on your entrepreneurial journey? 

I wish I knew how many people were waiting for a product like edggies to come to market. I've had people reach out to me with children and various medical conditions, saying how excited they are to try edggies to see if they can improve the lives of their families. That to me is the most heartwarming piece of my journey.

What is the most difficult decision you've had to make regarding your business so far? 

We made the decision to package edggies in tins. This is more expensive than plastic, and a lot of food industry experts warned against it. I just think we are in a place as humans where we have to be building businesses with sustainability and circularity in mind. edggies tins are made to be treasured and refilled. I don't want to be a part of making non-compostable plastics a bigger part of the food systems than they need to be. As a small business, finding compostable packaging with low order quantities will be our next challenge.

What can you help the VEGPRENEUR community with?

I am an investment banker by trade. If anyone needs help with preparing an investor pitch deck, let me know. I am happy to help!

How can the VEGPRENEUR community help you? 

I am looking forward to connecting with other founders who are working to build a world filled with more nutrition for all. I hope I can build some collaborations with like-minded brands to improve the offerings of the vegetable industry in this country and help people receive the nutrition they deserve.

Fun fact about you: 

I speak Spanish natively, French, and am learning Russian (my boyfriend is from Latvia, so I'm trying to communicate with his family <3)

My favorite vegetable growing up was broccoli... would love to make broccoli edggies one day!
