Vegan Take-and-Bake Lasagna Brand Debuts in NYC

New Yorkers are about to meet their new favorite dinner guest: Cucina Fantasma, a vegan take-and-bake lasagna brand making its debut this summer.

 
 
 

Created by a former line cook at Michelin-starred kitchens, Cucina Fantasma delivers handcrafted, high-protein lasagna thatโ€™s as easy to heat up as it is impossible to forget.

Cucina Fantasmaโ€™s flagship product, The Classic-ish Lasagna, is layered with fresh pasta and house-made slow-simmered seitan bolognese, tofu ricotta, and koji-almond mozzarella. Each lasagna is crafted to be baked at home or frozen for later, giving New Yorkers a way to enjoy restaurant-level comfort food with zero fuss.

โ€œLasagna is supposed to feel indulgent, satisfying, and celebratory, โ€ said Lindsey Masterman, founder of Cucina Fantasma. โ€œBut I wanted to reimagine it for the New York lifestyle. Cucina Fantasma will be available beginning August 23st for delivery and pickup โ€“ direct order at www.cucinafantasma.co. Production will be limited during the soft launch, with DoorDash delivery available only on Mondays and Tuesdays.

The name Cucina Fantasma (โ€œGhost Kitchenโ€ in Italian) nods to its roots: a delivery-first concept run out of Brooklynโ€™s shared culinary spaces. The brand blends classic Italian comfort food with a playful, modern aesthetic. Bold branding, unexpected collaborations, and guerrilla marketingโ€”think street posters and pop-up tastingsโ€”will bring the lasagna out of the kitchen and into the cityโ€™s cultural conversation.
