Startup Stage:

We are an early-stage company that has both bootstrapped and sold stock in the company.

What led you to where you are today?

I’ve always been passionate about food and having a positive impact on people’s lives. When I met my husband, Ryan, we knew we wanted to build something together. We revived Ryan’s parents' food truck from the 80s - they were Boulder’s first organic food truck. In 2011, with the vision of bringing local, organic goodness back to Boulder. Over five years, we grew from a beloved farmer's market fixture and catering service to expanding into retail, now gracing more than 4,500 doors nationwide!

What do you wish you knew before embarking on your entrepreneurial journey?

I could write a book about all the mistakes we’ve made in our food truck days. But I don’t have any regrets. We mess up, learn, and grow, and then try to inspire others to do the same or learn from our mistakes. If you are not learning, you are not evolving.

What is the most difficult decision you've had to make regarding your business so far?

It was an extremely difficult decision to move away from our frozen Millet tots and Cauliflower Wings since these were the first products we brought to the market post-food truck. But with the consumer demand for our Plant-Based M'EAT and its convenient shelf-stable nature, it was the best decision for the planet, our bodies, and our bottom line.

What can you help the VEGPRENEUR community with?
