What led you to where you are today?
My background in NYC hospitality as the manager at La Esquina and on the line at John Fraser’s Michelin-starred restaurant NIX, was the foundation for creating Uncle Nick’s. My desire to make a pizza that all 44 of my nieces and nephews could enjoy, regardless of dietary restrictions became the inspiration.
What do you wish you knew before embarking on your entrepreneurial journey?
Everything takes longer than you think and costs more than you can anticipate.
What is the most difficult decision you've had to make regarding your business so far?
Walking away from a partnership with a massive company so that I could be more nimble and get to market faster.
What can you help the VEGPRENEUR community with?
I've made so many mistakes. Expensive mistakes. I have a list of red flags to look out for when working with designers, freelancers, brokers, co-mans, and partners.
How can the VEGPRENEUR community help you?
Emotional Support. haha. No, but really, this industry is brutal and exhausting. Just when I think I'm ready to give up, I get a "win" that reignites that fire in my belly. Sometimes it helps to hear someone else's story of how they overcame obstacles and succeeded. Community is everything.
Fun fact about you:
I'm a great waterskier. I'm a model school dropout. I'm a ceramist and yogi. I have 15 brothers and sisters and 44 nieces and nephews. (Hence, Uncle Nick)
